So, uh, hi! This blogging thing has gotten spotty, hasn’t it? I’m hoping to get back to it now that life seems to have settled down post move/job change/holidays/and general malaise. I’m also hoping to get back to a lot of things, like, reading, cooking, and just chilling in general.
And so, about that cooking…. I’ve been cooking a LOT more lately since we moved. The surprising LACK OF MONEY (hello two house payments! Anyone looking for a house in NC?) has led to much more cooking around here. Yay for saving money and eating healthier!
Here are my plans for this week:
Sunday: Sunday has become something of a prep day around here. I’ll be getting some calzones ready for school lunches, making mini-quiches for quick breakfasts, getting snacks and whatnot together, and making my week easier (hopefully).
Monday: I got a new cast-iron skillet for Christmas and I have YET to grill some pork chops. So pork chops it is! I like them simple; with salt, pepper, and a touch of garlic. Serving it with a side of rice and some grilled veggies.
Tuesday: Hey! It’s my birthday!! I dang well hope I don’t have to cook for my 40th. Here’s hoping we have something good. That I don’t cook. lol
Wednesday: I am really feeling breakfast for supper. Scrambled eggs, sausage, bacon, and maybe grits? Biscuits? Toast? Jam? PANCAKES?
Thursday: We’ll eat with my aunt and uncle tonight!
Friday: It’ll just me and the hubby so we’ll probably fend for ourselves.
Saturday: Today is my birthday party! The husband is making the meal (again? Score!) and it’ll be for lunch, so I doubt I’ll be wanting much supper. Maybe some popcorn?
