The Weekly Menu – Week of January 21

In typical fashion, things did NOT go according to plan last week. Or the week before. If you were to look at my last Weekly Menu post, you will see I planning on breakfast for supper one day that week. THAT DID NOT HAPPEN. It WILL happen this week. This week will be interesting, as I seem to have been felled by the weirdest flu EVAH. (By that I mean tired, achy, fevery, and….not much else. Yet.) So, here are my BEST LAID PLANS for the week:

Sunday: I really hope to get some things made for the kids’ lunches this week. Pizza rolls, quiche, calzones…the things they’ll actually eat. AND, since I won’t be watching the Super Bowl with everyone else (!), I may just have some soup or something. Alone. (I’m banned due to having the flu.)

Monday: Dang it, I’m having some breakfast. I will have it! Even if I don’t cook it!

Tuesday: I don’t know how I will be feeling by this point. I’m either be on the road to recovery, or the road to bronchitis. Writing this on Saturday, I think I’ll be feeling better, so let’s keep up the positivity, shall we? As I am making a conscious effort to eat more fish, I think we will have this Crispy Salmon with Lemon Butter Sauce recipe I have my eye on. It’s in My Lodge Cast Iron Skillet cookbook and it sounds quick, healthy, and delicious. I think some pasta (for that lovely sauce) will be great with this! Oh! And some roasted asparagus!

Wednesday: The kids love pork chops. There is a Dry Rub recipe, again in My Lodge Cast Iron Skillet cookbook I’d like to try. I think we’ll have that with some rice and green beans perhaps. (I really really like that cookbook.)

Thursday: We eat with my family tonight.

Friday: It’s just me tonight and I’ll probably have leftovers.

Saturday: Depends on our schedule. We usually eat out for lunch and have a “fend for yourself” night for supper.

The Weekly Menu – Week of January 21


So, uh, hi! This blogging thing has gotten spotty, hasn’t it? I’m hoping to get back to it now that life seems to have settled down post move/job change/holidays/and general malaise. I’m also hoping to get back to a lot of things, like, reading, cooking, and just chilling in general.

And so, about that cooking…. I’ve been cooking a LOT more lately since we moved. The surprising LACK OF MONEY (hello two house payments! Anyone looking for a house in NC?) has led to much more cooking around here. Yay for saving money and eating healthier!

Here are my plans for this week:

Sunday: Sunday has become something of a prep day around here. I’ll be getting some calzones ready for school lunches, making mini-quiches for quick breakfasts, getting snacks and whatnot together, and making my week easier (hopefully).

Monday: I got a new cast-iron skillet for Christmas and I have YET to grill some pork chops. So pork chops it is! I like them simple; with salt, pepper, and a touch of garlic. Serving it with a side of rice and some grilled veggies.

Tuesday: Hey! It’s my birthday!! I dang well hope I don’t have to cook for my 40th. Here’s hoping we have something good. That I don’t cook. lol

Wednesday: I am really feeling breakfast for supper. Scrambled eggs, sausage, bacon, and maybe grits? Biscuits? Toast? Jam? PANCAKES?

Thursday: We’ll eat with my aunt and uncle tonight!

Friday: It’ll just me and the hubby so we’ll probably fend for ourselves.

Saturday: Today is my birthday party! The husband is making the meal (again? Score!) and it’ll be for lunch, so I doubt I’ll be wanting much supper. Maybe some popcorn?

The Weekly Menu – May 21

Well, just as I figured, last week did not go as planned! When does it ever? Never! However, gotta keep trying!

This week sees the end of soccer. We’re sad and looking forward to the fall season. In the meantime, life is getting more back to normal! And I have to say, I AM SO GLAD.



I have some pork chops I need to use, so I’m planning to grill those babies. I think I’ll use this Basil-Garlic Rub. Some roasted baby potatoes and asparagus on the side will be lovely!


One thing that I’ve tried recently that my family has not, is chimichurri. I feel that this is a grave injustice, so I’m going to attempt to make it at home. I got a lovely skirt steak and I’m going to use this recipe for the chimichurri. I think some jasmine rice and grilled veggies will go great with it!


Y’all, my day was made last week when I discovered that Walmart (WALMART!??!?!) had gluten free hot dog buns. And the bread is SOFT. I. AM. SO. EXCITED. So we’re having grilled hot dogs with all the fixings. I cannot wait.


According to the weather forecast, by Wednesday we’ll be swimming in rainfall. It’s supposed to rain Monday-Wednesday. So I figure by this day, we’ll be ready for soup and grilled cheese. I’m going to make this broccoli cheddar soup because what says Dry Out more than b&c soup?


We’ll be eating with my family, on our normal night, because NO SOCCER PRACTICE!!!


Since I usually get groceries on my way home on Friday’s, I usually pick something up for my supper. Here lately that means avocado rolls from my favorite Vietnamese/Thai restaurant! Yum!

Have I mentioned just how happy I am that life is returning to some semblance of normal? Of course, that’ll be thrown out the window once the new house is ready. Oh well, smooth sailing until then!

What food plans do you have for the week?


The Weekly Menu – May 14

For most of this year, cooking for my family has been a struggle. Having class, and work, and having to make up for work missed for class, I’ve been coming home exhausted. Then there’s homework (for three of us!), baths, teeth to brush, cuddles to be had, books to read (or not) and on and on. Food is a priority of course, but then there is the clean up and the time to plan.

Yikes, I’ve been busy! And now we’ve added soccer for my daughter! That’s almost over though. Class is over for me and it will be soon for the kids. Our house is almost ready and we’ll be moving soon. I can’t deny it; I am so looking forward to all of that! But, where do I fit in quick, easy, yet nutritious food for my family?

I have no idea, but I still try. This week’s schedule looks something like this:

Sunday: It’s Mother’s Day! We’ll be eating lunch with my mother-in-law and supper with my aunt-like-a-mother.

Monday: Soccer! It’s tournament time! Go Lightening!

Tuesday: My daughter’s been asking for quiche for weeks. Since I’m still gluten free, it will be crustless. I love this one from Budget Bytes! We’ll have bacon on the side for all the meat-eaters.

Wednesday: Depending on the outcome of the game Monday, we may be eating with my aunt and uncle, as the girl usually has soccer practice on Thursdays. If not, we will eat with them Thursday and I’m thinking we’ll have tacos. I’m leaning toward these favorites from Fox and Briar.

Thursday: Again, depending on the outcome Monday, the girl may have soccer practice. If she does, we all usually go out to eat. Here lately, that means Mexican.

Friday: This is usually my night alone as the kids go to their grandma’s and my husband goes out with his brother. I’ll probably have leftover quiche. Unless I find myself at Michael’s again (it happens A LOT), then I’ll pick up something.

Saturday: Last day for soccer! We’ll either watch the girl play her last game, and/or celebrate the end of the season with all the teams! We are responsible for a dessert. I’m going to make a strawberry pie, since they’re in season, with my hands-down, absolute favorite, gluten free crust from Gluten Free on a Shoestring.
